Ingredients
  

For the Pasta

  • 8 oz whole wheat pasta

For the Chicken

  • 1 lb lean chicken breast, cut into pieces
  • 1 tbsp olive oil
  • Salt to taste Salt
  • Pepper to taste Pepper

For the Sauce

  • 1 cup Greek yogurt Can substitute with sour cream or cashew cream.
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese Nutritional yeast can be used for a vegan alternative.
  • Fresh parsley for garnish Fresh parsley for garnish (optional) Adds a pop of color and freshness.

Instructions
 

Preparation

  • Gather all your ingredients and prep your workspace.
  • Chop the chicken, mince the garlic, and measure out your pasta and other ingredients.

Cooking

  • Bring a large pot of salted water to a boil and cook the whole wheat pasta according to the package instructions (about 8-10 minutes).
  • Drain the pasta and set aside.
  • In a large skillet, heat the olive oil over medium heat and add the chicken pieces. Cook for about 6-8 minutes until browned and cooked through.
  • Add the minced garlic to the skillet and sauté for about 1 minute, stirring constantly.
  • Reduce heat to low and stir in the Greek yogurt and grated Parmesan cheese until well combined.
  • Add the drained pasta to the skillet and toss gently to coat with the creamy sauce.
  • Taste and adjust seasoning with additional salt, pepper, or garlic if desired.

Serving

  • Plate the pasta and sprinkle with fresh parsley if desired.
  • Serve warm and enjoy!

Notes

Best enjoyed fresh, but can be stored. Refrigerate for up to 3-4 days or freeze for up to 2 months.
