  • 4 pieces boneless, skinless chicken breasts
  • ½ cup hot honey Can substitute with regular honey or agave syrup.
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • to taste salt and pepper
  • 2 cups cooked rice or quinoa Substitutes: farro, couscous, or cauliflower rice.
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) Can customize with other favorite veggies.
  • ¼ cup low-sodium soy sauce Use tamari for gluten-free option.
  • 2 tbsp fresh lime juice

Preparation

  • Gather all your ingredients and utensils: cutting board, knife, skillet, measuring cups and spoons, small bowl for the sauce.
  • Chop the vegetables and mince the garlic.
  • Pat the chicken breasts dry using paper towels and season both sides generously with salt and pepper.

Cooking

  • Heat olive oil in a skillet over medium-high heat until it shimmers.
  • Add the seasoned chicken breasts and cook for about 5-6 minutes on one side without moving them.
  • Flip the chicken and sear the other side for an additional 5-6 minutes until cooked through.
  • Mix hot honey, minced garlic, soy sauce, and lime juice in a small bowl and set aside.
  • Once the chicken is cooked, pour the honey mixture into the skillet over the chicken.
  • Add the mixed vegetables and toss gently in the sauce; cook for about 3-4 minutes until crisp-tender.

Serving

  • Remove from heat and serve the chicken and vegetables over a bed of cooked rice or quinoa.
  • Drizzle with any remaining sauce and enjoy your meal.

  • After enjoying your meal, clean up your workspace to prepare for your next culinary adventure.

Notes

Customize with various vegetables, and consider adding chopped green onions, cilantro, or sesame seeds as toppings.
