  • 2 medium shallots, thinly sliced Can be replaced with yellow or white onion if preferred.
  • 2 tablespoons chopped fresh sage Other herbs like thyme or rosemary can be experimented with.
  • cup all-purpose flour Use a gluten-free flour blend for a gluten-free option.
  • 3 cups low-sodium chicken or turkey broth Vegetable broth may be used for a vegetarian option.
  • 1 cup dry white wine Sauvignon Blanc or Pinot Grigio recommended.
  • to taste Kosher salt and black pepper Season according to taste preference.
  • pan drippings from herb-roasted turkey (optional) This can enhance the flavor of the gravy.

Preparation

  • Gather all ingredients and kitchen tools, including a medium skillet, measuring cups, a whisk, and a heat-safe strainer.
  • Melt the butter in the medium skillet over medium heat for 1-2 minutes.
  • Add shallots and sauté for 5-8 minutes until softened and fragrant.
  • Stir in fresh sage and cook for another 2-3 minutes.
  • Incorporate flour, whisking for 1-2 minutes to eliminate raw flour taste.
  • Slowly pour in the broth while whisking continuously to prevent lumps. Bring to a boil over medium-high heat.
  • Allow the gravy to boil for about 5 minutes, stirring occasionally until thickened.
  • Season the gravy with salt and pepper to taste before removing from heat.
  • Optionally strain the gravy through a heat-safe strainer to remove shallots and sage.
  • Let the gravy cool before storing in an airtight container.

Notes

Store in the fridge for up to 3 days or freeze for up to 3 months. Reheat on low heat, adding broth or water if too thick.
