  • 2 cups cooked rice Preferably day-old for better texture
  • 1 lb chicken breast, diced
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 eggs beaten
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Preparation

  • Start by gathering all your ingredients. Make sure your rice is cooked and cooled, ideally using day-old rice for the best texture.
  • Dice the chicken, chop the vegetables, and get the eggs beaten and ready.

Cooking

  • Heat the sesame oil in a flat-top griddle or skillet over medium-high heat.
  • Once the oil is hot, add the diced chicken. Sauté until the chicken is browned and fully cooked, which should take about 5-7 minutes.
  • When your chicken is cooked, push it to one side of the pan. Pour the beaten eggs into the empty space on the skillet. Allow them to cook for a couple of minutes, then scramble until just set.
  • Next, add your mixed vegetables to the pan. Stir everything together while cooking until the vegetables are tender, which should take about 3-4 minutes.
  • Add the cooked rice to the skillet. Pour in the soy sauce, mixing everything well to ensure the rice is evenly coated.
  • Season your fried rice with salt and pepper according to your preference. Stir well, making sure every bit of rice is seasoned perfectly.
  • Continue to stir and cook for another 2-3 minutes until everything is heated through and slightly crisp at the bottom.
  • Once everything is well combined and hot, remove the pan from the heat. Garnish with chopped green onions.

Notes

For a gluten-free option, use gluten-free soy sauce or tamari. This dish is easily customizable with your choice of protein or vegetables.
