Ingredients
  

Beef Tenderloin Dinner

  • 2 beef tenderloin portions 6–8 oz each
  • 2 tbsp olive oil
  • 4 cloves garlic minced
  • salt and pepper to taste
  • fresh rosemary and thyme for seasoning

Lemon Butter Sauce

  • 1 cup lemon butter sauce made with butter, lemon juice, zest, and garlic

  • 1 bunch asparagus trimmed
  • 2 potatoes large, peeled
  • ½ cup heavy cream for mashed potatoes
  • ½ cup Parmesan cheese grated

Dessert

  • 8 oz dark or milk chocolate
  • 1 cup heavy cream for ganache
  • fresh berries for garnish

Instructions
 

  • Gather all ingredients, washing and prepping the vegetables. Mince garlic and herbs for flavor.
  • Boil potatoes in salted water for 15–20 minutes until tender, then drain and set aside.
  • Heat olive oil in a skillet over medium-high heat. Season beef with salt, pepper, and garlic, then sear for 4–5 minutes per side for medium-rare.
  • Roast asparagus in the same pan for 4–5 minutes or until tender-crisp.
  • In a saucepan, melt butter and add lemon juice, zest, and garlic to create the lemon butter sauce. Keep warm on low heat.
  • Mash the cooked potatoes with heavy cream and Parmesan until smooth. Season to taste.
  • Plate mashed potatoes and asparagus, then place the seared beef on top. Drizzle with lemon butter sauce.
  • For dessert, melt chocolate and cream in a double boiler to make ganache. Pour into ramekins and chill.
  • Garnish the dessert with fresh berries before serving.

Notes

Store leftovers separately in airtight containers for up to 3 days. Reheat gently in a microwave or oven. To make it vegetarian, replace beef tenderloin with portobello mushrooms and use coconut cream for the mashed potatoes.
