Ingredients
  

Pancake Batter

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup milk or dairy-free milk alternative
  • 1 large egg
  • 2 tbsp melted butter or coconut oil

Instructions
 

  • In a bowl, whisk together flour, sugar, baking powder, and salt.
  • In another bowl, mix milk, egg, and melted butter until smooth.
  • Combine wet and dry ingredients, stirring until just blended. Do not overmix.
  • Preheat a skillet over medium heat and lightly grease with butter or oil.
  • Pour 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form, then flip and cook until golden.
  • Keep cooked pancakes warm in a 200°F (93°C) oven while making the rest.
  • Assemble your reindeer: use pretzel twists for antlers, chocolate chips for eyes, and a red candy for the nose.
  • Serve warm with syrup, fruit, or whipped cream for a festive touch!

Notes

To make this recipe vegan, substitute egg with flaxseed meal and use plant-based milk and oil instead of butter. These pancakes can be refrigerated for up to 3 days or frozen for 2 months. Reheat in a toaster oven for best texture.
