  • 1 lb ground beef can substitute with ground turkey or chicken
  • 2 cups mixed vegetables carrots, corn, and green beans
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheddar cheese or your favorite cheese
  • salt and pepper to taste
  • 1 tsp dried thyme
  • 1 tsp Worcestershire sauce
  • 2 cups cooked rice or noodles as base layer

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  • In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is translucent. Drain excess fat.
  • Add mixed vegetables, cream of mushroom soup, Worcestershire sauce, thyme, salt, and pepper. Stir to combine and cook for 3 minutes.
  • Spread cooked rice or noodles evenly across the greased baking dish.
  • Pour beef and vegetable mixture over the base and distribute evenly.
  • Sprinkle shredded cheese over the top.
  • Bake for 25–30 minutes, until cheese is melted and bubbly.
  • Let cool for a few minutes before serving hot.

Notes

Customize this casserole with your favorite vegetables or protein alternatives. For a vegetarian version, use plant-based ground meat and vegan soup. It also freezes well for up to 3 months.
