  • 6 cups chicken or vegetable broth Use vegetable broth for a vegetarian option.

  • 2 cups green beans, trimmed and chopped
  • 1 can diced tomatoes 15 oz can

  • 1 cup corn (frozen or fresh)

Preparation

  • Begin by prepping all your vegetables. Chop the onion, dice the carrots, and celery, and mince the garlic.

Cooking the Base

  • In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until the vegetables soften, about 5 minutes.

Adding Flavors

  • Stir in the minced garlic and dried thyme. Cook for another minute until fragrant.

Starting the Soup

  • Pour in the broth and bring the mixture to a boil.

Adding Vegetables

  • Once boiling, add the diced potatoes and chopped green beans. Cook for about 10 minutes until the potatoes are tender.

Final Touches

  • Add the diced tomatoes and corn, and season with salt and pepper to taste.
  • Let the soup simmer for another 5 to 10 minutes. Adjust seasoning if needed.

Serving

  • Ladle the soup into bowls and garnish with freshly chopped parsley before serving.

Notes

This soup is perfect for meal prep; it can be stored in the fridge for up to 3-4 days or frozen for up to 3 months. For added flavor, a splash of lemon juice or some red pepper flakes can be included before serving.
