Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  • Beat in the egg and vanilla extract until fully incorporated.
  • Slowly mix in the apple cider until the batter is smooth.
  • Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  • Drop spoonfuls of batter onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes until the edges are golden brown and the centers look slightly underbaked.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Assembly

  • Once the cookies are cool, spread 1 tablespoon of caramel sauce between two cookies to create a sandwich.
