Ingredients
  

  • 2 large tortillas
  • 1 apple diced, Granny Smith or Honeycrisp
  • 1 tsp cinnamon
  • 1 tbsp sugar optional, adjust to taste
  • 1 cup shredded cheese cheddar or mozzarella
  • butter or oil for cooking

Instructions
 

  • Heat skillet over medium heat with a little butter or oil.
  • Add diced apple, cinnamon, and sugar. Cook 5 minutes until softened and fragrant.
  • Remove apple mixture and set aside. Place one tortilla in skillet.
  • Sprinkle half the cheese, then add apple mixture, then top with remaining cheese.
  • Place second tortilla on top. Cook 3-4 minutes until golden brown on bottom.
  • Flip carefully and cook until other side is golden and cheese is melted.
  • Remove, let rest for 1 minute, then slice into wedges and serve warm.

Notes

Serve with yogurt, honey, or maple syrup for extra sweetness. Try pears instead of apples for variation.
