  • 4 large flour tortillas
  • 2 cups prepared apple pie filling or cooked cinnamon apples, finely chopped
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 4 ounces cream cheese, softened (optional)
  • 2 tablespoons powdered sugar (optional)
  • 1 teaspoon vanilla extract (optional)
  • 2 tablespoons unsalted butter
  • powdered sugar, for dusting (optional)
  • Honey, as desired (optional)
  • Caramel sauce, as desired (optional)
  • Whipped cream, as desired (optional)

Instructions
 

Preparation

  • Gather and measure out all your ingredients. If using cream cheese, ensure it’s softened for easy mixing. Chop the apple filling or cooked apples into small pieces.
  • In a bowl, combine softened cream cheese with powdered sugar and vanilla extract. Mix until smooth and creamy. (This step is optional.)
  • In a separate bowl, combine chopped apples with brown sugar, ground cinnamon, and nutmeg. Stir until evenly coated with the spices.

Assembly and Cooking

  • Spread a thin layer of the cream cheese mixture (if using) over one side of each tortilla. Then, spread the apple mixture on one half of each tortilla.
  • Fold each tortilla in half to form half-moon shapes.
  • Heat a large skillet over medium heat and melt 2 tablespoons of unsalted butter to coat the bottom.
  • Place folded quesadillas in the skillet, cooking for 2-3 minutes on one side until golden brown.
  • Flip the quesadillas with a spatula to cook the other side for another 2-3 minutes until golden brown.
  • Transfer the cooked quesadillas to a cutting board and allow to cool slightly.
  • Slice into wedges, serve warm, and optionally dust with powdered sugar or drizzle with honey, caramel sauce, or topped with whipped cream.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For reheating, warm in a skillet over low heat.
