  • ½ cup diced apples Use fresh apples for best flavor.
  • 2 tablespoons melted butter Can substitute with coconut oil for dairy-free.
  • 1 teaspoon vanilla extract

Preparation

  • Preheat oven to 350°F (175°C) and gather all ingredients.

Mix Wet Ingredients

  • In a large bowl, combine Greek yogurt, sugar, and egg. Whisk until smooth.

Combine Dry Ingredients

  • In a separate bowl, whisk together flour, oats, baking powder, baking soda, salt, and cinnamon.

Mix Wet and Dry Ingredients

  • Fold dry ingredients into the wet mixture until just combined.

Add Butter and Apples

  • Gently fold in melted butter, vanilla extract, and diced apples.

Fill Muffin Cups

  • Spoon the batter into muffin cups, filling each about three-quarters full.

Bake

  • Bake for 18-20 minutes until golden brown. Test with a toothpick for doneness.

Cool Down

  • Allow muffins to cool for a few minutes before transferring to a wire rack.

Notes

Keep stored in an airtight container for 3-4 days at room temperature. Muffins can be frozen for up to three months.
