Ingredients
  

Apple Date Cinnamon Pudding

  • 2 cups apples peeled, cored, and diced
  • ¾ cup dates pitted and chopped
  • cup brown sugar
  • 2 eggs room temperature
  • 1 cup milk
  • 3 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg optional
  • ¼ tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  • Spread diced apples and chopped dates evenly in the prepared baking dish.
  • In a mixing bowl, whisk together eggs, brown sugar, milk, melted butter, vanilla extract, cinnamon, nutmeg, and salt.
  • Pour the pudding mixture evenly over the apples and dates.
  • Bake for 30–35 minutes, or until the pudding is set and lightly golden on top.
  • Let cool slightly and serve warm, optionally with cream, custard, or vanilla ice cream.

Notes

This pudding thickens as it cools and tastes even better the next day. Naturally sweet from apples and dates with minimal added sugar.
