  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup dates, chopped
  • 1 cup apples, peeled and diced
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup milk

Golden Butter Sauce

  • ½ cup butter
  • 1 cup brown sugar
  • ½ cup heavy cream

Preparation

  • Gather all your ingredients. Pre-chop the dates and apples for easy mixing.
  • Preheat your oven to 350°F (175°C) and grease a baking dish.

Mixing and Baking

  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  • In another bowl, sift together the flour, baking powder, baking soda, ginger, cinnamon, and salt.
  • Gradually add the dry ingredients to the creamed butter mixture, alternating with the milk, mixing until just combined.
  • Gently fold in the chopped dates and diced apples.
  • Pour the batter into the greased baking dish and smooth the top.
  • Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Making Sauce and Serving

  • While the sponge is baking, in a saucepan, melt 1/2 cup of butter, then stir in 1 cup of brown sugar and 1/2 cup of heavy cream. Let it simmer until thickened.
  • Once the sponge is done, cool it slightly before cutting into squares and drizzling with the golden butter sauce.

Notes

For a gluten-free version, you can use a gluten-free flour blend. Vary sweetness with applesauce or sugar substitutes for dietary adjustments.
