  • 1 tablespoon pure maple syrup Can replace with agave nectar.
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup chopped pecans Can substitute with walnuts.
  • 2 tablespoons dried cranberries
  • to taste Plain Greek yogurt or whipped cream (optional, for serving)

Instructions
 

Preparation

  • Gather all your ingredients.
  • Wash the sweet potatoes thoroughly and set them aside.
  • Peel and dice the apples.

Cooking the Sweet Potatoes

  • Preheat your oven to 400°F.
  • Pierce each sweet potato several times with a fork.
  • Arrange them on a baking sheet and roast for 45 to 55 minutes until tender.

Cooking the Apple Filling

  • Melt the butter in a skillet over medium heat.
  • Add the diced apples and sauté for about 5 minutes until softened.
  • Stir in the maple syrup, ground cinnamon, nutmeg, cloves, and salt and let cook for 2 more minutes.

Assembling the Dish

  • When the sweet potatoes are done, let them cool slightly and slice each potato lengthwise.
  • Fluff the flesh with a fork to create space for the filling.
  • Spoon the spiced apple mixture evenly into each sweet potato cavity.
  • Sprinkle with chopped pecans and dried cranberries.
