Ingredients
  

For the Bread

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup unsalted butter, softened Ensure butter is at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apples, peeled and diced Tart varieties like Granny Smith are recommended

For the Streusel Topping

  • ½ cup brown sugar
  • ¼ cup rolled oats
  • ¼ cup chopped nuts (optional) Pecans or walnuts can be used

For the Glaze

  • 1 cup powdered sugar For glaze
  • 2 tablespoons milk For glaze

Preparation

  • Gather all your ingredients. Ensure the butter is softened to room temperature for easier mixing. Peel and dice the apples, setting them aside for later use.

Mix Dry Ingredients

  • In a medium bowl, combine the all-purpose flour, baking soda, salt, and ground cinnamon. Whisk together until fully mixed.

Cream Butter and Sugar

  • In a large mixing bowl, cream the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy, about 3-5 minutes.

Incorporate Eggs and Vanilla

  • Add the eggs one at a time to the creamed mixture, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.

Combine Wet and Dry Ingredients

  • Gradually add the flour mixture to the wet ingredients, mixing gently until just combined. Fold in the diced apples.

Prepare the Streusel Topping

  • In a separate small bowl, mix the brown sugar, rolled oats, and chopped nuts (if using) until crumbly.

Layer and Bake

  • Pour half of the batter into a prepared 9×5 inch loaf pan, sprinkle with half of the streusel topping, add the remaining batter, and top with the rest of the streusel.

Bake the Bread

  • Place the loaf pan in a preheated oven and bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.

Cool the Bread

  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Make the Glaze

  • Whisk together the powdered sugar and milk in a small bowl until smooth.

Notes

Store in an airtight container at room temperature. For longer storage, refrigerate or freeze. Make mini loaves for gifting.
