  • 1 bundle scallions (6 to 8 oz), thinly sliced, divided into whites and greens
  • 4 tsp kosher salt
  • to taste freshly ground black or white pepper
  • 10 cups water
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • ¼ cup black rice vinegar
  • ¼ cup soy sauce
  • 2 tbsp toasted sesame oil
  • to taste crispy chili oil

Preparation

  • Start by gathering all your ingredients.
  • Slice the garlic, chop the ginger, and cut the scallions, dividing the white parts from the green.

Cooking the Soup Base

  • In a large pot, add the water and bring it to a boil.
  • Once boiling, add the chicken thighs, garlic, ginger, scallion whites, salt, and pepper. Cover and allow to simmer on medium heat for about 25 minutes.

Shredding the Chicken

  • After the chicken is cooked through, remove it from the pot and let it cool for a few minutes.
  • Shred the chicken using two forks and set aside.

Adding Carrots and Noodles

  • Add the matchstick carrots to the pot and cook for about 5 minutes until softened.
  • Add the dried noodles and cook according to package instructions, usually around 5-7 minutes.

Mixing in Sauces

  • Once the noodles are cooked, reduce the heat and mix in the black rice vinegar, soy sauce, and toasted sesame oil. Stir to combine.

Final Steps

  • Return the shredded chicken to the pot, stirring to combine evenly and warming for another 5 minutes.
  • Taste and adjust seasoning as needed.

Serving

  • Ladle the soup into bowls, garnishing with the green parts of the scallions.
  • A splash of crispy chili oil can enhance the dish beautifully.
