Ingredients
  

Pudding Batter

  • 2 cups apples peeled, cored, and diced
  • ¾ cup dates pitted and chopped
  • cup honey
  • 2 eggs room temperature
  • 1 cup milk
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  • Spread diced apples and chopped dates evenly in the prepared baking dish.
  • In a mixing bowl, whisk together eggs, honey, milk, melted butter, vanilla, cinnamon, nutmeg, and salt.
  • Pour the mixture evenly over the apples and dates.
  • Bake for 35–40 minutes, or until the pudding is set and lightly golden on top.
  • Cool slightly before serving. Serve warm on its own or with yogurt or vanilla ice cream.

Notes

This pudding is naturally sweetened with honey and dates. Leftovers keep well refrigerated and can be reheated gently.
