Main Ingredients

  • 1 sheet puff pastry, defrosted Can substitute with phyllo dough or crescent rolls.
  • 4 oz brie cheese, preferably a small cheese wheel Camembert works as an alternative.
  • ½ cup cranberry sauce Store-bought or homemade.
  • to taste candied pecans, optional, for garnish Can use seeds as an alternative.
  • to taste fresh rosemary sprigs, optional, for garnish
  • as needed cooking spray, for greasing the mini muffin tin

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly coat a mini muffin tin with cooking spray.
  • Place the wheel of brie in the freezer for 10-15 minutes for easier cutting.
  • Unroll the sheet of puff pastry and cut it into 16 squares (4 rows by 4 rows). Each square should be about 3 inches.
  • Press each pastry square into the prepared muffin tin.
  • Slice the chilled brie into small cubes.

Assembly

  • Place a cube of brie in the center of each pastry square.
  • Spoon a small amount of cranberry sauce over the cheese.

Baking

  • Bake in the preheated oven for 15-18 minutes until golden brown and flaky.
  • Remove from oven and cool for a few minutes. Gently pop them out using a knife.

Serving

  • Garnish with chopped candied pecans and fresh rosemary sprigs. Serve immediately.

Notes

Store leftovers in an airtight container for 3-4 days, or freeze unbaked bites for up to 2 months. Reheat in a 350°F oven for 10-12 minutes.
