Ingredients
  

For the Puff Pastry

  • 1 package 14.1 oz frozen puff pastry sheets, thawed
  • 1 egg beaten (for egg wash)
  • Everything bagel seasoning (optional)

For the Filling

  • 1 tablespoon olive oil
  • 1 medium shallot, finely chopped
  • 2 cloves garlic, minced
  • 10 ounces fresh spinach, washed and roughly chopped
  • 4 ounces cream cheese, softened
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon nutmeg
  • Salt and freshly ground black pepper to taste

For the Topping

  • 4 large eggs
  • Fresh chives, chopped (for garnish)

Preparation

  • Gather all your ingredients on your kitchen counter. Preheat your oven to 400°F (200°C).
  • Thaw the puff pastry sheets at room temperature for about 30-40 minutes.
  • Line a baking sheet with parchment paper.
  • Unfold the thawed puff pastry on a lightly floured surface. Cut each sheet into four equal squares.
  • Brush the tops of each pastry square with the beaten egg.

Baking the Pastry

  • Bake the pastry squares on the prepared baking sheet for 12-15 minutes, or until golden brown.

Making the Filling

  • Heat olive oil in a large skillet over medium heat. Add chopped shallots and sauté until softened.
  • Add minced garlic and cook for 1 minute.
  • Add the chopped spinach and stir until wilted.
  • Press out excess moisture from the spinach and return it to the skillet.
  • Add cream cheese, heavy cream, Parmesan cheese, nutmeg, and salt & pepper. Stir until smooth.

Assembling the Dish

  • After the pastry has cooled slightly, create a well in the center of each square. Spoon in the spinach filling.
  • Crack an egg into each well and season with salt and pepper.

Final Baking

  • Return the pastries to the oven and bake for an additional 10-15 minutes, until the egg whites are set but yolks are still runny.

Serving

  • Garnish with fresh chopped chives and serve hot.

Notes

For a lighter option, substitute cream cheese with ricotta or Greek yogurt.
