  • 2 medium zucchinis, sliced Use fresh zucchinis for best flavor.
  • 1 cup grated parmesan cheese Use freshly grated for better melt.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and slice the zucchinis into even rounds, about half an inch thick.
  • In a large mixing bowl, combine the olive oil, garlic powder, Italian seasoning, salt, and pepper.
  • Add the zucchini slices to the bowl and toss gently until well-coated with the oil and seasoning mixture.
  • Line a baking sheet with parchment paper and arrange the zucchini in a single layer.
  • Sprinkle the grated parmesan cheese evenly over the zucchini slices.
  • Bake in the preheated oven for 15-20 minutes, checking for a golden crust and tender zucchini.
  • Remove from the oven and let cool for a minute before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge. Bake for about 10 minutes to reheat. Customizable with spices or toppings like crushed almonds or fresh herbs.
