  • 2 pieces salmon fillets (approximately 6 oz each)
  • 10.5 oz frozen spinach, thawed and drained
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 7 oz sour cream can be substituted with dairy-free alternatives
  • 5.3 oz shredded mozzarella cheese
  • 1 tbsp olive oil
  • Salt, to taste
  • Pepper, to taste

Preparation

  • Gather all your ingredients. Thaw the spinach and drain it properly to avoid excess moisture.
  • Slice the onion, mince the garlic, and prepare the salmon fillets for seasoning.

Cooking the Base

  • In a skillet over medium heat, add 1 tablespoon of olive oil. Once shimmering, toss in the sliced onions and sauté for about 3 to 4 minutes until translucent.
  • Add minced garlic and cook for an additional 30 seconds.

Incorporating Spinach

  • Add the thawed spinach to the skillet and stir. Cook for 2 to 3 minutes until heated through and excess moisture evaporates. Season with salt and pepper.

Preparing the Creamy Mixture

  • Remove the skillet from heat and stir in the sour cream until blended with the spinach and onions.

Oven Preparation

  • Preheat your oven to 350°F.

Preparing the Salmon

  • Season the salmon fillets generously with salt and pepper.
  • In a preheated pan, sear each side of the salmon fillets for about 2 minutes.

Assembling the Dish

  • Grease a baking dish and place the seared salmon fillets skin-side down.
  • Spread the creamy spinach mixture evenly over each fillet.
  • Sprinkle shredded mozzarella cheese on top.

Baking

  • Bake in the preheated oven for 15 to 20 minutes until the salmon is opaque and flakes easily.

Notes

For added flavor, mix in some herbs or spices into the creamy spinach. Avoid excess moisture in the spinach to prevent a watery dish.
