Ingredients
  

Vegetable Filling

  • 1 cup mixed vegetables (carrots, bell peppers, zucchini) Chopped small for even cooking
  • 1 cup cream cheese Use plant-based cream cheese for dairy-free
  • 1 tablespoon olive oil Brushed on rolls to achieve crispiness
  • to taste none salt
  • to taste none pepper

Rolling Ingredients

  • 1 package spring roll wrappers Look for gluten-free wrappers if needed

Instructions
 

Preparation

  • Chop your mixed vegetables into small pieces.
  • In a mixing bowl, combine the chopped vegetables with cream cheese, olive oil, salt, and pepper. Stir until well mixed.

Rolling

  • Lay out a spring roll wrapper in a diamond shape, with one corner pointing towards you.
  • Spoon a tablespoon of the vegetable mixture into the center of the wrapper.
  • Fold the two side corners over the filling, then roll it up tightly from the bottom corner.
  • Place the finished roll seam-side down on a lined baking sheet.
  • Repeat until you have used up all the filling.

Baking

  • Brush the tops of the rolls with olive oil.
  • Preheat your oven to 375°F (190°C) and bake for 20-25 minutes until golden brown.
  • Allow to cool for a minute before serving.

Notes

These rolls can be served as an appetizer or a main dish and are perfect for meal prepping. Store in an airtight container for up to three days.
