  • 5 sprigs fresh rosemary
  • sea salt and ground black pepper To taste.

Preparation

  • Start by washing your lamb chops and patting them dry.
  • Preheat your oven to 400°F (200°C).
  • Season both sides of the lamb chops with sea salt and ground black pepper.
  • Lay fresh rosemary sprigs around the seasoned lamb chops.
  • In a small bowl, combine olive oil, balsamic vinegar, honey, Dijon mustard, and minced garlic. Whisk until well blended.
  • Pour the marinade over the lamb chops, ensuring they are evenly coated. Optionally, let it marinate for about 15 minutes.
  • Place the lamb in the preheated oven and bake for 8-10 minutes.
  • Check the internal temperature; it should reach 145°F (63°C) for medium-rare.
  • Let the lamb chops rest for about 2 minutes before serving.
  • Serve on a warm plate and drizzle any leftover marinade over the top.

Notes

For a richer flavor, consider searing the chops in a hot skillet for 2-3 minutes on each side before baking.
