In a mixing bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, minced garlic, Italian seasoning, salt, and black pepper until well combined.
Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, or up to 2–4 hours for more flavor.
Preheat your grill to medium-high heat. Remove chicken from the marinade and let excess drip off.
Grill the chicken for about 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
