Ingredients
  

Chicken & Marinade

  • 4 boneless skinless chicken breasts
  • cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp garlic, minced
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • In a mixing bowl, whisk together balsamic vinegar, olive oil, Dijon mustard, minced garlic, Italian seasoning, salt, and black pepper until well combined.
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Seal and refrigerate for at least 30 minutes, or up to 2–4 hours for more flavor.
  • Preheat your grill to medium-high heat. Remove chicken from the marinade and let excess drip off.
  • Grill the chicken for about 6–8 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  • Remove from the grill and let rest for a few minutes before serving. Enjoy with your favorite sides.

Notes

Marinating longer intensifies flavor and helps tenderize the chicken. Serve with grilled vegetables or a fresh salad. Leftovers keep well in the fridge up to 3 days.
