Ingredients
  

Crust

  • 1 chocolate cookie crust (store-bought or homemade)

Cheesecake Filling

  • 8 ounces cream cheese (softened)
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract

Toppings

  • 1 cup chopped strawberries (fresh)
  • 1 banana sliced
  • ½ cup chocolate drizzle (store-bought or homemade)

Preparation

  • Begin by gathering all your ingredients and your baking pan. Preheat your oven to 350°F (175°C). If you're making a homemade chocolate crust, crush your cookies and mix with melted butter before pressing them into the pan.
  • If you're using a store-bought crust, simply lay it into a greased baking pan. If you made a homemade crust, bake it for 10 minutes to firm it up before adding the cheesecake layer. Allow it to cool slightly after baking.

Mixing

  • In a large mixing bowl, use a hand mixer or stand mixer to beat the softened cream cheese with the sugar until the mixture is smooth.
  • Add the eggs and vanilla extract into the cream cheese mixture. Beat again until it's well combined and fluffy.

Baking

  • Once your cream cheese mixture is ready, pour it over the prepared cookie crust. Use a spatula to spread it evenly across the crust.
  • Place the baking pan into your preheated oven. Bake until the edges are set and the center has a slight jiggle, which usually takes around 30-35 minutes.
  • After baking, take the pan out and let it cool to room temperature. Then, transfer it to the refrigerator to chill for at least 3 hours or until fully set.

Assembly

  • While the cheesecake is chilling, wash and chop your strawberries and slice your banana.
  • Once the cheesecake is fully set, take it out of the refrigerator. Top with the sliced bananas and chopped strawberries.
  • Drizzle chocolate over the top of your fruit-topped cheesecake for a beautiful finish.

Notes

Store in an airtight container in the refrigerator for up to 5 days. These bars can also be frozen for up to three months.
