Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup mashed ripe bananas (about 3 bananas)
  • 1 cup sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup chopped walnuts

Whipped Cream Topping

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar

Preparation

  • Gather all your ingredients together and measure them out.
  • Preheat your oven to 350°F (175°C).

Mixing Dry Ingredients

  • In a medium bowl, combine the flour, baking soda, and salt. Whisk until well blended.

Creaming Butter and Sugar

  • In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.

Adding Wet Ingredients

  • Add eggs one at a time, mixing well after each addition. Then add mashed bananas and vanilla extract, mixing until smooth.

Combining Mixtures

  • Gradually add the dry mixture into the wet mixture, stirring gently until just combined.

Folding in Walnuts

  • Gently fold in the chopped walnuts until evenly distributed.

Baking

  • Pour the batter into a greased cake pan and smooth the top.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Cooling and Topping

  • Let the cake cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  • Beat the heavy cream with powdered sugar until soft peaks form for a light topping.

Notes

Store in an airtight container in the refrigerator for 3-5 days. This cake can also be frozen for up to 3 months.
