  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Sauce

  • ½ cup mayonnaise Can be substituted with Greek yogurt for a lighter option.
  • 2 tablespoons sriracha Adjust for heat preference.
  • 1 tablespoon honey Maple syrup or agave can be used for a vegan option.
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice Freshly squeezed preferred.

Preparation

  • Prep your workspace and ingredients by organizing everything.
  • Cook the rice according to the package instructions. Set it aside.
  • Cut the chicken breasts into bite-sized pieces and season with salt and pepper.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken pieces and sauté for about 6-8 minutes until cooked through.
  • While chicken cooks, prepare the sauce by mixing mayonnaise, sriracha, honey, garlic powder, and lime juice in a small bowl.
  • Once chicken is cooked, add mixed veggies and cook for another 2-3 minutes.
  • Remove from heat and pour the sauce over the chicken and veggies, stirring until well coated.
  • Serve over the cooked rice and garnish with optional toppings like extra sriracha or chopped green onions.
