Preparation

  • Begin by gathering all your ingredients. Chop the vegetables, dice the cooked chicken, and measure out your sauces. Preparation is key to a smooth cooking process.

Cooking

  • In a large pan or wok, heat oil over medium heat. Once hot, add your mixed vegetables and sauté for about 3-4 minutes until tender but still crisp.
  • Push the sautéed vegetables to the side of the pan. Pour in the beaten eggs and scramble them until fully cooked, about 2-3 minutes. Then, mix them in with the veggies.
  • Add your diced cooked chicken and cooked rice to the pan. Break up any clumps of rice as you stir everything together.
  • Pour in the soy sauce and bang bang sauce over the rice mixture. Stir gently to ensure an even distribution of flavors.
  • Taste your mixture and add salt and pepper as needed. Adjust according to your preferences, keeping in mind the saltiness from the soy sauce.
  • Continue to cook the mixture for an additional 3-5 minutes, stirring frequently. Look for the rice to be heated through and slightly crisp.
  • Remove the pan from heat, and sprinkle the sliced green onions on top. Serve hot, garnished with extra sauce if desired.

Notes

Consider adding a splash of lime juice or a sprinkle of sesame seeds for brightness and texture. Swap the vegetables seasonally for freshness. For added protein, consider crumbled tofu or nuts.
