Ingredients
  

Main Ingredients

  • 4 chicken thighs
  • 1 cup rice rinsed and drained
  • 1 cup chicken broth
  • ½ cup honey BBQ sauce
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt and pepper to taste
  • 1 cup mixed vegetables optional

Instructions
 

  • Gather all ingredients. Rinse rice and drain. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  • Heat olive oil in a large skillet over medium heat. Sear chicken thighs for 5 minutes per side until golden brown.
  • Add rice, chicken broth, and honey BBQ sauce to the pan. Stir to combine evenly.
  • Bring to a simmer, then reduce heat to low. Cover and cook for 20 minutes.
  • When rice is nearly cooked, stir in mixed vegetables if using. Cover and cook for another 5 minutes.
  • Remove from heat and let rest 5 minutes before serving. Fluff rice with a fork and serve warm.

Notes

Marinate chicken in BBQ sauce for an hour before cooking for extra flavor. Add diced pineapple for a sweet twist or black beans for a southwest version. Store leftovers in an airtight container for up to 3 days.
