  • 1 lb ground beef Can substitute with ground turkey or chicken for a leaner option.
  • 1 cup shredded cheese (cheddar or Mexican blend) Use pepper jack for a spicy twist.
  • ½ cup onion, diced Make sure to finely dice.
  • 1 can refried beans
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • 8 large flour tortillas Look for gluten-free options if needed.
  • to taste Salt and pepper
  • optional Sour cream and salsa for serving

Instructions
 

Preparation

  • Gather all your ingredients, ensuring onions are finely diced and spices are measured out.
  • In a skillet over medium heat, add the ground beef and diced onion. Cook until browned and onion is translucent, about 5-7 minutes. Drain excess fat.
  • Stir in the refried beans, garlic powder, chili powder, cumin, salt, and pepper. Mix until heated through, about 3-5 minutes.
  • While the beef mixture cools slightly, warm tortillas in a dry skillet or microwave.

Assembly

  • Spoon a portion of the beef mixture onto each tortilla and top with shredded cheese.
  • Fold tortillas over the filling, tucking in the sides to seal.

Cooking

  • In a deep frying pan, heat enough oil over medium heat to submerge the chimichangas. The oil should be hot but not smoking.
  • Place chimichangas seam-side down in the hot oil. Fry until golden brown, about 3-4 minutes per side.
  • Remove from oil and drain on paper towels.

Notes

Avoid overfilling the tortillas to prevent breakage. Drain fat from the meat to avoid sogginess. Check oil temperature before frying.
