  • 6-8 ounces beef bacon, sliced Or use turkey bacon for a lighter option.
  • 2 medium Yukon Gold or Red New potatoes, thinly sliced or diced
  • 8-10 large eggs Use room temperature eggs for better mixing.
  • ½ cup whole milk or half-and-half Can substitute with almond or soy milk for a dairy-free option.
  • 1 cup Gruyere cheese, grated (plus extra for topping) Other cheeses like cheddar or mozzarella can also be used.
  • 1 small yellow onion or shallot, diced
  • 2 teaspoons fresh minced garlic
  • ¼ cup chopped fresh chives (plus extra for garnish)
  • 1 knob Unsalted butter For cooking.
  • 1 teaspoon kosher salt To taste.
  • ½ teaspoon freshly ground black pepper To taste.
  • 1 teaspoon Red pepper flakes Optional, for some heat.
  • Extra virgin olive oil For cooking.

Preparation

  • Start by prepping your ingredients: slice the beef bacon, dice the potatoes, and chop your onions and chives.

Cooking

  • In a large skillet over medium heat, cook the sliced beef bacon until crispy, around 8-10 minutes. Drain excess fat but reserve about a tablespoon.
  • Crumbled the bacon and set aside.
  • In the same skillet, add the potatoes and cook until tender and golden, about 10 minutes.
  • Add diced onions and sauté until soft, about 3-5 minutes. Then add the minced garlic and sauté for an additional minute.
  • In a bowl, whisk together eggs, milk (or half-and-half), half of the chopped chives, and season with salt and pepper.
  • Return the bacon, potatoes, onions, and garlic to the skillet and mix thoroughly. Sprinkle half of the grated Gruyere cheese on top.
  • Pour the egg mixture over the ingredients in the skillet and use a spatula to distribute evenly.
  • Cook on the stovetop until the edges begin to set, about 5-7 minutes.
  • Preheat the oven to 375°F (190°C). Once the edges are set, sprinkle remaining cheese and transfer the skillet to the oven. Bake for 12-18 minutes until fully cooked and slightly puffed.
  • Let the frittata rest for about 5-10 minutes before garnishing and slicing.

Notes

Frittata can be customized with vegetables or different cheeses. Ideal for meal prep and reheats well.
