Beef Enchiladas

Ingredients
  

Beef Enchiladas

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • salt and black pepper to taste
  • 2 cups red enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar or Mexican-blend cheese
  • fresh cilantro optional garnish

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  • In a skillet over medium heat, cook ground beef and onion until beef is browned. Drain excess fat.
  • Add garlic, chili powder, cumin, salt, and pepper. Cook for 1–2 minutes until fragrant.
  • Spread a small amount of enchilada sauce in the bottom of the baking dish.
  • Fill tortillas with beef mixture and a sprinkle of cheese. Roll up and place seam-side down in the dish.
  • Pour remaining enchilada sauce over tortillas and top with remaining cheese.
  • Bake uncovered for 20–25 minutes until bubbly and cheese is melted.
  • Garnish with fresh cilantro and serve warm.

Notes

Serve with rice, beans, or a fresh salad. Corn tortillas can be used instead of flour if preferred.
