Preparation

  • Take the beef tenderloin out of the refrigerator and let it sit at room temperature for about 30 minutes.

Cooking

  • Arrange the seasoned vegetables in an even layer in a roasting pan and place the beef tenderloin on top.
  • Roast in the preheated oven for about 25-30 minutes, checking for doneness.
  • Check the internal temperature starting at 20 minutes; aim for 130°F for medium-rare.
  • Once cooked, remove the pan from the oven and let the beef rest for 10 minutes before slicing.
  • Slice the beef and serve with the roasted vegetables and garnish with fresh herbs.
