Ingredients
  

Puff Pastry

  • 1 sheet puff pastry defrosted

Cheese Filling

  • 113 g cream cheese room temperature
  • 60 g powdered sugar
  • 1 tsp vanilla extract

Berry Filling

  • 150 g fresh blueberries
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice

Finishing

  • 1 egg for egg wash
  • 1 tbsp milk for egg wash
  • powdered sugar for sprinkling (optional)

Instructions
 

  • Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  • In a mixing bowl, combine the cream cheese, powdered sugar, and vanilla extract until smooth.
  • In another bowl, toss the blueberries with cornstarch and lemon juice to lightly coat.
  • Roll out the defrosted puff pastry on a lightly floured surface and cut into 8 squares.
  • Place a spoonful of the cream cheese mixture in the center of each square, then top with a bit of the berry mixture.
  • Fold two opposite corners of each square over the filling and press the edges to seal.
  • Whisk the egg and milk to make an egg wash and brush it over each puff.
  • Bake in the oven for about 15-18 minutes or until puffed and golden brown.
  • Remove from oven, let cool slightly, and sprinkle with powdered sugar before serving if desired.

Notes

You can swap blueberries for other berries like raspberries or strawberries. Adjust sweetness to taste.
