  • 2 large large cucumbers, thinly sliced

  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped

Dressing

  • ¼ cup apple cider vinegar Can substitute with balsamic vinegar
  • 2 tablespoons olive oil Can substitute with avocado oil
  • 1 teaspoon sugar Can substitute with honey or agave syrup
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Prep your workspace and gather all ingredients and tools.
  • Wash and thinly slice the cucumbers, then set aside in a large bowl.
  • Thinly slice the red onion and add to the cucumbers.

Dressing

  • In a small bowl, combine apple cider vinegar, olive oil, sugar, salt, and pepper; whisk until blended.
  • Pour the dressing over the cucumber and onion, tossing gently to coat.

Final Touch

  • Gently fold in the chopped dill and parsley.
  • Chill the salad in the fridge for at least 10 minutes before serving.
  • Serve with optional garnish of dill or parsley.
