Ingredients
  

Salad

  • 4 cups mixed spring greens
  • 1 cup strawberries sliced
  • ½ cup blueberries
  • cup goat cheese crumbled
  • ¼ cup pecans toasted
  • ¼ cup red onion thinly sliced

Vinaigrette

  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • In a large salad bowl, combine the spring greens, sliced strawberries, blueberries, red onion, and toasted pecans.
  • In a small bowl, whisk together olive oil, honey, lemon juice, Dijon mustard, salt, and black pepper until emulsified.
  • Drizzle the vinaigrette over the salad and toss gently to combine.

Notes

You can substitute raspberries for strawberries or add avocado slices for extra creaminess. Serve immediately after dressing for best texture.
