  • 6 cups vegetable broth creates a rich base
  • 1 teaspoon cumin adds warmth
  • 1 teaspoon thyme provides herbal notes
  • Salt and pepper to taste for seasoning
  • 2 tablespoons olive oil to sauté the veggies

Preparation

  • Rinse the lentils under cold water to remove any impurities.
  • Chop the onion, carrots, and celery to create a colorful base.
  • Mince the garlic so it’s ready to enhance the flavors.

Cooking

  • In a pot, heat olive oil over medium heat.
  • Add the chopped onion, diced carrots, and celery. Sauté for about 5 minutes until softened.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the rinsed lentils to the pot and pour in the vegetable broth.
  • Stir in the cumin and thyme. Add salt and pepper to taste.
  • Bring the soup to a boil.
  • Once boiling, reduce the heat and let the soup simmer for about 30 minutes.
  • Check the lentils for tenderness. If they’re not quite tender, continue simmering for a few more minutes.
  • Taste and adjust the seasoning if necessary.
  • Serve the soup hot and enjoy every spoonful!

Notes

Store leftovers in an airtight container in the refrigerator for 4-5 days. This soup can be frozen for up to three months.
