Ingredients
  

Pasta and Cheese

  • 8 oz elbow macaroni Cook according to package instructions.
  • 2 cups shredded sharp cheddar cheese Use freshly grated for best results.
  • 1 cup shredded Gruyère cheese Alternatively, use your favorite cheese.

Sauce Base

  • 2 tablespoons butter Melt over medium heat.
  • 2 tablespoons all-purpose flour Used for roux to thicken the sauce.
  • 2 cups milk Whole milk is preferred for creaminess.

Seasonings

  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste Salt and pepper Adjust according to preference.

Lobster and Topping

  • 1 cup cooked lobster meat Make sure it's drained and chopped.
  • ½ cup breadcrumbs Optional for a crunchy topping.

Instructions
 

Preparation

  • Cook the elbow macaroni according to package instructions, adding a pinch of salt to the boiling water. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat, being careful not to brown it.

Cooking the Sauce

  • Whisk in the flour and cook for about 2 minutes to form a roux.
  • Gradually pour in the milk while continuously whisking until the mixture thickens, approximately 3-5 minutes.
  • Stir in the garlic powder, onion powder, salt, and pepper until well combined.
  • Remove from heat and mix in the cheddar and Gruyère until fully melted.

Combining Ingredients

  • Gently fold in the cooked macaroni and lobster meat into the cheese sauce until evenly coated.
  • Transfer the mixture to a greased baking dish. If desired, sprinkle the breadcrumbs on top.

Baking

  • Preheat your oven to 350°F (175°C) and bake for about 20-25 minutes until bubbly and golden.
  • Let cool for a few minutes before serving.

Notes

For a spicier version, you can add jalapeños or sriracha. For a gluten-free option, substitute with gluten-free pasta and flour.
