Equipment

  • Skillet
  • Mixing Bowl
  • Tortilla wrap (large)
  • Spatula

Ingredients

Special Sauce

  • ½ cup mayonnaise
  • 3 tbsp ketchup
  • 1 tbsp yellow mustard
  • ¼ cup dill pickle relish

Wrap Filling

  • 1 lb lean ground beef 85–90% lean
  • 1 cup shredded iceberg lettuce
  • ½ cup sliced dill pickles
  • ½ cup shredded cheddar cheese
  • 4 large flour tortillas

Instructions

  • In a small bowl combine mayonnaise, ketchup, mustard and dill pickle relish to make the special sauce. Set aside.
  • Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it up, until browned and cooked through. Drain any excess fat.
  • Warm the flour tortillas slightly in a microwave or on a clean skillet to make them more pliable.
  • Assemble each wrap: spread about 2 tbsp of the special sauce on the tortilla, then add a quarter of the cooked beef, lettuce, pickles, and shredded cheese.
  • Roll up the tortilla tightly to form a wrap, folding in the sides as you roll. Serve immediately, or wrap in foil for later.

Notes

You can add diced onions or tomato slices for extra flavor. For a lower-carb version, substitute large lettuce leaves for the tortilla wraps.
