Ingredients

  • ¼ cup extra‐virgin olive oil
  • 2 small yellow onions chopped
  • 4 cloves garlic peeled & large-chunk chopped
  • 2 each jalapeño peppers seeded & chopped (optional heat)
  • 2 15-oz cans black beans drained & rinsed
  • tsp salt
  • ½ tsp ground cumin
  • 2 Tbsp fresh lime juice from ~1 lime
  • 3 Tbsp water
  • ¼ cup fresh chopped cilantro plus extra for garnish (optional)

Instructions
 

  • Heat the olive oil in a small saucepan over medium heat. Add the chopped onions, garlic, and jalapeños and cook, stirring occasionally, until very soft (about 10 minutes).
  • Transfer the cooked onion-garlic-jalapeño mixture into a blender or food processor. Add the drained black beans, salt, cumin, lime juice, water and chopped cilantro.
  • Blend/purée until almost smooth, stopping and stirring once or twice if needed. If too thick, add a little more water or lime juice to adjust consistency.
  • Transfer the dip to a serving bowl and garnish with additional chopped cilantro and lime wedge if desired. Serve warm, room-temperature or chilled with tortilla chips.

Notes

You can adjust how spicy the dip is by leaving more (or fewer) jalapeño seeds/ribs, and you can serve it warm or chilled. It pairs well with tortilla chips or veggie sticks.
