  • Gather all your ingredients. Measure out the pasta, black-eyed peas, cherry tomatoes, cucumber, red onion, and parsley.
  • Rinse and drain the black-eyed peas thoroughly and rinse the pasta after cooking.

Cooking

  • Cook the pasta according to the package instructions until al dente, typically about 8-10 minutes.
  • Drain the pasta and rinse under cold water to stop the cooking process.

Mixing

  • In a large mixing bowl, combine the cooked pasta, black-eyed peas, halved cherry tomatoes, diced cucumber, and diced red onion.
  • Chop the fresh parsley and add it to the mixing bowl.

Dressing Preparation
