  • 1 can black-eyed peas, drained and rinsed
  • ½ cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • ¼ cup diced onion Can substitute with green onions for a milder flavor.
  • ¼ cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika Smoked paprika can be used for added flavor.
  • to taste Salt and pepper
  • 1 tablespoon olive oil (for frying)

For Serving

  • Dipping sauce of choice Consider yogurt sauce, tzatziki, or spicy aioli.

Preparation

  • Gather and measure all ingredients. Chop onion, parsley, and garlic.
  • Drain and rinse black-eyed peas.

Cooking

  • Mash black-eyed peas in a bowl until mostly smooth but with some texture.
  • Mix in breadcrumbs, diced onion, parsley, minced garlic, cumin, paprika, salt, and pepper until combined.
  • Form the mixture into small patties.
  • Heat olive oil in a skillet over medium heat until hot.
  • Fry patties for 3-4 minutes on each side until golden brown and crispy.
  • Remove patties and drain on paper towels to absorb excess oil.
  • Let cool slightly before serving.

Serving

  • Arrange patties on a platter and serve warm with dipping sauce.

Notes

To store, cool completely and place in an airtight container. Can be refrigerated for 3-4 days or frozen for longer storage. Reheat in the oven or skillet.
