  • 1 cup fresh blackberries
  • ½ cup pistachios, chopped
  • 1 cup all-purpose flour Can substitute with gluten-free flour
  • ½ cup sugar
  • ½ cup butter, softened Can substitute with coconut oil for dairy-free
  • 1 large egg For vegan, substitute with flaxseed meal mixture
  • 1 teaspoon vanilla extract Omit or replace with almond extract if unavailable
  • ½ teaspoon baking powder Ensure it's fresh for optimum results
  • ¼ teaspoon salt

Instructions
 

Preparation

  • Gather all ingredients. Ensure butter is softened at room temperature. Grease a suitable-sized baking pan.
  • Preheat the oven to 350°F (175°C).

Mixing

  • In a mixing bowl, cream the softened butter and sugar together for about 2-3 minutes until light and fluffy.
  • Add the egg and vanilla extract to the creamed mixture, mixing until fully blended.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet mixture, mixing just until combined to avoid tough bars.
  • Gently fold in the blackberries and chopped pistachios, being careful not to break the berries.

Baking

  • Pour the batter into the greased pan and spread evenly.
  • Bake in the preheated oven for 25-30 minutes or until golden brown at the edges and a toothpick comes out clean.
  • Cool completely in the pan before slicing into bars.

Notes

Serve warm, room temperature, or chilled. Store in an airtight container at room temperature for up to 3 days or refrigerate for a week. Can freeze for up to 3 months.
