  • 4 large flour tortillas Gluten-free options can be used.
  • 1 tbsp BBQ sauce Choose your favorite brand.
  • 1 tsp olive oil For griddle cooking.

Preparation

  • Begin by shredding your cooked chicken into bite-sized pieces. Measure out the other ingredients to make the assembly process quick and easy.
  • In a mixing bowl, combine the shredded chicken, hot honey, and BBQ sauce. Mix until everything is evenly coated. If you’re adding any optional veggies, toss those in now as well.

Assembly

  • Take two of the flour tortillas and spread the chicken mixture evenly over them, making sure to cover the tortillas for the best flavor in every bite.
  • Sprinkle the shredded cheese generously over the chicken mixture. Add as much or as little cheese as you prefer based on your taste.
  • Carefully place another tortilla on top of each filled tortilla to create two quesadillas. Press down gently to help them stick together.

Cooking

  • Preheat your Blackstone griddle to medium heat, allowing it to reach the perfect temperature for a nice, crispy finish.
  • Drizzle the preheated griddle with olive oil. Place the quesadillas on the griddle and allow them to cook for about 3-4 minutes.
  • Once the bottom is golden brown, carefully flip the quesadillas with a spatula and cook for another 3-4 minutes on the other side until golden and crispy.
  • After the cooking time, check to make sure the cheese is melted and the tortillas are browned to your liking.

Serving

  • Remove the quesadillas from the griddle. Let them cool for a minute before slicing into wedges. Serve warm and enjoy!

Notes

Pair these quesadillas with salsa, guacamole, or sour cream for dipping. You can customize the fillings and serve with your favorite drinks.
