Ingredients
  

Dough

  • 3 ½ cups bread flour
  • 2 ¼ tsp active dry yeast 1 packet
  • 1 ¼ cups warm water around 43 °C (110 °F)
  • 2 Tbsp sugar or honey
  • 1 tsp salt
  • 1 cup blueberries fresh or frozen
  • 1 Tbsp vegetable oil optional, helps keep dough soft

Boil Bath

  • 8 cups water for boiling bagels
  • 1 Tbsp honey or sugar to sweeten the water bath

Optional Topping

  • coarse sugar or dried blueberries for topping (optional)

Instructions
 

  • In a small bowl, mix warm water, sugar (or honey), and yeast until foamy. Let stand 5-10 minutes.
  • In a large bowl, combine bread flour and salt. Add the yeast mixture and oil (if using), and mix to form a dough.
  • Knead the dough (by hand or with a mixer) for about 8–10 minutes, until smooth and elastic.
  • Gently fold in the blueberries, being careful not to burst them too much.
  • Cover the dough and let it rise in a warm place for about 1 hour, until roughly doubled.
  • Punch down the dough and divide it into 8 equal pieces. Shape each into a ball, then poke a hole through the center and stretch to form bagel shapes.
  • Let the shaped bagels rest on a parchment-lined baking sheet for 20–30 minutes.
  • Preheat a large pot of water to a gentle boil. Add honey or sugar to the water.
  • Boil the bagels 2-3 at a time for about 30–60 seconds per side (shorter boil = softer crust, longer = chewier).
  • Remove the bagels with a slotted spoon, drain briefly, then place them back on the baking sheet.
  • If desired, brush each bagel with beaten egg and sprinkle with coarse sugar or dried blueberries.
  • Bake in a preheated oven at 425 °F (220 °C) for about 20–25 minutes, until golden and cooked through.
  • Let the bagels cool on a wire rack before slicing and serving.

Notes

You can freeze the bagels after baking and reheat in the toaster or oven. For extra blueberry flavor, try mixing in dried blueberries or a bit of blueberry extract.
