Ingredients
  

Quesadilla Base

  • 4 whole whole wheat tortillas
  • 1 cup blueberries (fresh or frozen) Fresh blueberries should be washed and dried.
  • 4 slices turkey bacon Can substitute with vegetarian options.
  • 1 cup shredded cheese (cheddar or mozzarella) Use your choice of cheese.
  • 1 tablespoon honey For drizzling on top.
  • 1 tablespoon butter For cooking in the skillet.

Preparation

  • Gather all your ingredients. Wash and dry fresh blueberries. Cut turkey bacon into small pieces.
  • In a skillet over medium heat, cook the turkey bacon until crispy (about 5-7 minutes). Remove and set aside.
  • Melt 1 tablespoon of butter in the same skillet.

Cooking

  • Once cheese starts melting, add half of the blueberries and crumbled turkey bacon, then top with remaining cheese.
  • Cover with a second tortilla and press down gently.
  • Cook quesadilla for 3-4 minutes until the bottom is golden brown, then flip and cook the other side for another 3-4 minutes.
  • Remove and repeat for the second quesadilla.

Serving

  • Let both quesadillas cool for a minute, then slice into wedges.
  • Drizzle with honey before serving.

Notes

To store leftovers, let cool completely, then place in an airtight container for 3-4 days in the fridge, or freeze for longer storage.
