Ingredients
  

  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1 can (10 oz) Rotel tomatoes with green chilies drained
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 tbsp cilantro or parsley chopped, optional
  • ¼ cup red bell pepper or jalapeño diced, optional

Instructions
 

  • Set out all ingredients and allow the cream cheese to soften at room temperature for 20–30 minutes.
  • In a large mixing bowl, blend softened cream cheese and sour cream until smooth.
  • Stir in the drained Rotel tomatoes.
  • Add shredded cheddar cheese and ranch seasoning mix, stirring until evenly combined.
  • Fold in optional chopped cilantro/parsley and diced bell pepper or jalapeño.
  • Cover and chill in the refrigerator for at least 1 hour to let the flavors meld.
  • Stir before serving and transfer to a serving dish. Enjoy with chips, crackers, or veggies.

Notes

For a lighter version, substitute Greek yogurt for sour cream. Add more jalapeños if you want extra heat. Best served chilled.
