Ingredients
  

For the Shrimp

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste

For the Tacos

  • 8 pieces corn tortillas
  • 1 cup shredded cabbage
  • ½ cup pico de gallo
  • ¼ cup cilantro, chopped
  • 1 piece lime, cut into wedges

Preparation

  • Begin by gathering all the necessary ingredients. Peel and devein the shrimp if not already done, and prepare the cabbage, pico de gallo, and cilantro.
  • In a mixing bowl, toss the shrimp with olive oil, chili powder, cumin, and salt.
  • Fire up your grill to medium-high heat.

Grilling

  • Add the seasoned shrimp to the grill and cook for about 2-3 minutes on each side until they turn pink and opaque.
  • While the shrimp are grilling, place the corn tortillas directly on the grill for about 30 seconds on each side until slightly charred and pliable.

Assembly

  • Place a few pieces of grilled shrimp onto each tortilla.
  • Top with shredded cabbage, pico de gallo, and cilantro.
  • Squeeze fresh lime juice over the tacos.
  • Serve immediately, preferably with extra lime wedges on the side.

Notes

For extra flavor, marinate shrimp for an hour before grilling. Consider adding diced mango or pineapple for a refreshing twist.
