Ingredients
  

  • 1 lb Brussels sprouts trimmed and halved
  • 8 oz Boursin cheese herb and garlic flavor recommended
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C). Trim Brussels sprouts, removing damaged leaves, and slice them in half.
  • In a large bowl, toss Brussels sprouts with olive oil, garlic powder, salt, and pepper until evenly coated.
  • Line a baking sheet with parchment paper and spread Brussels sprouts in a single layer, avoiding overcrowding.
  • Roast for 20–25 minutes, stirring halfway through, until golden and crispy on the edges.
  • Remove from oven and immediately stir in Boursin cheese while the sprouts are still hot, allowing it to melt and coat evenly.
  • Taste and adjust seasoning with additional salt or pepper if needed, then serve warm.

Notes

For extra flavor, add chopped nuts like pecans or drizzle balsamic glaze before serving. You can also make a vegan version using dairy-free Boursin-style cheese.
